How to make People Search Core Results Sortable

I would not try to do this with XSL. I would subclass the core search results web part and change the query results and sort them befor rendering.

Whats the default sort order for Search results in Sharepoint 2013

The default sort order is Relevance. You can change this to any sortable Managed Property if you like, for example Last Name for People (if you make the Last Name property Sortable).

Crawled/Mapped Properties w/SharePoint Online

People properties (and BCS properties) have to be created at the tenant (or farm for on premises) level. I suspect that you created your properties in a Site Collection.
