You could technically convert ("upgrade"?) a SharePoint-hosted App to a Provider- or Auto-Hosted App by adding code to your original project. All 3 types of Apps have App Webs with the no-code restriction, and you host your code somewhere else (Azure or other server) or not at all for SP-Hosted

I would also suggest to look into Promises/Deferred objects, which make this kind of code somewhat clearer to read.

I wish I could give this answer more than one upvote. The basic problem is indeed understanding of how asynchronous programming works. And +1 for suggesting ListData.svc which is much better suited for such a simple task.

This (backup/restore of a site with a SharePoint-hosted app) would be an interesting test to try! As Paul said I'm guessing the data would be restored but you might loose the plumbing that allows you to access it.

SharePoint-Hosted Apps only have the SharePoint parts. P-Hosted and A-Hosted Apps CAN have content types, lists, etc. in their App Web

You've got some of this wrong. An Auto-Hosted or Provider-Hosted App has two parts: What gets deployed in a remote location (Azure, other server) and what will go in SharePoint in an App Web. It's just that for these 2 types the App Web only has a manifest. In your second screenshot, you can see your actual App project ("Provider"), what you have selected is your Provider-Hosted App (that can be anything)

Actually the Client API cannot go higher than Sites, so there's nothing to create them from (cannot access Web Applications). This cannot be done with the COM.

Yup behind the scenes Managed Metadata columns are derived from Lookups. They're Lookups to the TaxonomyHiddenList.. So OP's problem does indeed look like a permission mishap with that list.
