No, you definitely must NOT uninstall/reinstall SharePoint, especially when having one box farm. Leave old domain, join new one, reconfigure service accounts, migrate users and groups.

For SQL, why don't you just create alias using cliconfg.exe on SP box pointing from old SQL name to new? And for migrating groups, you can use "stsadm -o migrategroup".

Collation is actually applied on each database separately, so changing the default on server level doesn't change it on existing databases. You could pre-create the SharePoint databases manually to ensure they're created with correct collation: technet.microsoft.com/en-us/library/cc262869(v=office.14).aspx

I guess the "correct" answer is to create separate ItemStyle file and reference that from the Web Part. It requires few extra steps though: exporting the web part, modifying the XML to reference new ItemStyle file and importing it back in.

It is a single value if the Field is defined to only have single values. You need to cast it to SPFieldUserValue.
