I have a site that has the correct permissions to allow contribute / full control of a document list, but when I add a document the options in the ribbon are all grayed out except for the read only options.

I'm having this same issue with Calendars as well. I can't delete items from the ribbon.

Are you the site collection administrator as well ? Please check the same and confirm. – Arko D May 15 '13 at 13:50

Looks like your site is in a read only mode. Change it through central admin > manage web applications > configure quotas and locks > select your site collection and see the status. – Arko D May 15 '13 at 15:15
    
Thank you for the input! Just for clarification, I can do things like add/remove/change web parts, add documents, and modify the site itself. I had a feeling it may be some type of read only issue, but does the fact that I can do all those other things still lead you to think it's a read only issue? – user17020 May 15 '13 at 17:00
