Can i create a simple custom approval workflow in SharePoint 2010 with a single approver?

Question

I am trying to make a custom workflow for approving and publishing documents in SharePoint 2010. I looked at a number of example and tutorials but none that i could find address what i am aiming to do.

I want to simplify the workflow so that a user hits publish, selects a single approver then approver can choose to approve or reject. I dont want multiple approvers, due dates or any of those other many options.

Is it possible to do this?
