We had a user remove the "Completed" column from the All Items (default) view on a task list. When we try to add the "Completed" column back to the the view, it comes back as a (Yes/No) column instead of a check box.

Is there a way we can force it to show back up as a check box?

The only solution I have found, was to recreate the task list. This is not really an option, as the list has several items that are in the middle of workflow processes.
